This coursse helps to develop your culinary skills and lead to a qualification that is highly sought after by the industry.
Units include:
- the principles of food safety supervision for catering
- practical gastronomy
- advanced vegetable and vegetarian dishes
- advanced meat dishes
- advanced poultry and game dishes
- advanced fish and shellfish dishes
- fermented dough and batter products
- petits fours and paste products
- hot, cold and frozen desserts
- biscuits, cakes and sponges.
During the course, you will complete a variety of work placements within the industry. You will also have the opportunity to compete in local and national competitions, volunteer at events such as Victorious Festival and take part in charitable initiatives. In addition, you will be invited on a variety of trips.
A minimum of five GCSEs at grade 4 or above, including maths and English. You will aslo require a Level 2 in Professional Cookery or relevant industry experience.
This course is full-time for one year and you are also required to complete 30 hours in a work placement setting. Attendance to maths and English lessons at the appropriate level is also expected as part of this programme.
You will continue to develop your skills with practical assessments, carried out in a realistic working environment. There will be online learning and assessments and three practical assessments throughout the year. These will include supervisory skills, exploring gastronomy and food product development. You will regularly review your work with your tutor and receive feedback on your progress.
You can progress to employment or a level 4 qualification in hospitality management.
